We mill certified organic berries whole on a stone mill and sift about 30% of the coarse bran back out. Bread flour handling, with the part of the grain worth eating still in it. A big mill takes the germ and the bran out of wheat on purpose. Both carry oil, oil goes rancid, and a bag that has to last a year on a warehouse shelf cannot contain anything alive. Then they add a short list of vitamins back in and print "enriched" on the front. What is left keeps almost forever because most of what was worth eating is gone.

We go the other way. We buy certified organic hard red spring wheat berries whole, mill them on a stone mill in our kitchen, and sift about 30% of the coarse bran back out. That is the whole trick: enough bran out that it handles like bread flour, the germ left in so it tastes like something. Wheat germ is the embryo of the seed, the part that would have grown into a plant, and it is the densest nutrition in the berry. It is also the first thing an industrial mill removes, because the oil in it will not sit on a shelf for a year. We mill our own flour, so we end up with it anyway. It is what the 40 and 60 mesh screens catch. Not toasted, not stabilized, not blended. Stir it into oatmeal, yogurt, pancake batter or bread dough and keep the bag cold.
