Wheat germ is the embryo of the seed, the part that would have grown into a plant, and it is the densest nutrition in the berry. It is also the first thing an industrial mill removes, because the oil in it will not sit on a shelf for a year. We mill our own flour, so we end up with it anyway. It is what the 40 and 60 mesh screens catch. Not toasted, not stabilized, not blended. Stir it into oatmeal, yogurt, pancake batter or bread dough and keep the bag cold.
